This is a recipe I’ve long wanted to make, but it’s always easier for me to buy it in the market than to spend an hour about something I can get in a few seconds. I finally made myself to check if there are any differences between the homemade and the one you can buy. And believe me – that one is not as good as mine! For this very simple recipe we need:
1 cup of almonds
1/2 cup of walnuts
1 cup of oat flakes
7 fresh dates
15 dried apricots
a handful of raisins
a hand of coconut chips or plain coconut flour you can find in any market
2 spoons of peanut butter
1/2 cup of honey (although I added a little more until the mixture was sticky enough)
First, I preheated almonds, oat flakes and walnuts, purely for a stronger aroma, and because nuts bring out their useful oils when exposed to higher temperature (15 minutes at 150 degrees C, the oven should be cold when you put them in):

After that, I just put the almonds and nuts into the blender, but I didn’t want to completely crush them, and I deliberately left large pieces. I also chopped the dates, coconut and the apricots, and then put all of the ingredients into one mixture of almonds, walnuts and oats:

You’ll need a little bit more strength, but don’t worry, it won’t last too long:

Then I picked up a square-shaped platter and covered it with a baking paper, on which I smashed the mixture and covered it with another paper so that the mixture doesn’t stick to my hands (it is very sticky!) but also because I wanted to spread it evenly on the surface.

Let the mixture rest for about 45 minutes in the freezer, take it out and cut them into pieces. Keep them in a closed container in the fridge. You won’t need any other sweet for energy during a busy day! 🙂
