Don’t know why, but I’ve been thinking of making these beauties for a long time. And they are so easy to make, that you don’t need much time and only a few ingredients. Today was the day. I used a gluten-free mixture of flour beacuse I’m trying to avoid gluten because of my asthma problems, but if you don’t mind it, just use regular flour. So, the ingredients are:
- 3/4 cup unsalted butter, melted
- 3/4 cup caster sugar
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup cocoa powder
- 1/2 cup gluten free (or all purpose) flour
- 1 teaspoon baking powder
- 70 grams dark chocolate

First, preheat the oven to 160 C (320 F). Grease and line an 8 inch square baking tin with baking or parchment paper (or size 20), ensuring two sides overhang. In a large mixing bowl, whisk together the melted butter and sugars, then add the vanilla extract and stir.

After that, add eggs, one by one, mixing every time, then sift in the cocoa powder, baking powder and flour. Stir until just combined. Add chocolate, chopped into cubes.

Pour the brownie batter in the prepared tin and place in the oven.

Bake brownies for approximately 30-35 minutes.

Leave in tin and transfer in the baking paper to a wire rack until they cool completely. Enjoy with a cup pf milk 😉
