This spring tiredness is slowly killing me, and I just crave for some additional energy. I don’t eat so much sugar because I’m trying to put as much healthier food into my body as I can, so I tried this recipe for the coconus bars that I will share with you today. It resembles little to famous bounty chocolates, but these are smoother and have less calories. In fact, I changed the recipe a bit, because some of the ingredients were not available or I did not really like it in this combination. The best of all is that your conscience will be clean after you are enjoy in this candy.
Base ingredients (dark part):
• 1 cup ground raw almonds
• 13 fresh dates, cleansed
• 2 tablespoons coconut butter, room temperature
• 3 tablespoons cocoa
Coconut filling ingredients:
• 1 can of coconut milk
• 3 tablespoons of agave syrup or honey
• 3 tablespoons of coconut butter, room temperature
• 1 spoon of vanilla extract
• 3 cups of coconut flour
Glaze:
• 100 g dark chocolate (min. 70% cocoa)
• 1 tablespoon agave syrup
• 1 tablespoon cocoa
• 2 tablespoons coconut butter
Blend dates and almonds in the food processor so that dates do not stick too much for the knife of the processor, than add the other ingredients, combine the mass by hand mixing and transfer it to the baking paper that you have placed in the appropriate mold (the mixture doesn’t need to be baked, so it can be also resistant to high temperature):

Align the base evenly to look like a plate, about 0.7 cm thick. Cool it for about ten minutes in the freezer.

For the coconut filling mix all the ingredients, and the mixture must be sticky and dense enough to place it nicely on the cooled dates’ base.

And distribute this mass evenly to cover the entire base.

The mixture goes back to the freezer for another 15 minutes, while you prepare the glaze. Mix the ingredients gently at low temperature until all of them are one, but be sure to cool down a little before glazing the bars. Leave in the fridge to cool it down, cut into tiles or as it suits you, keep it in a closed box in the fridge. And enjoy it with the clean conscience! 🙂
